Mace is the lacy aril that surrounds the nutmeg seed. It is dried slowly and graded by colour and by the proportion of whole blades to broken pieces.

Because mace is aroma-sensitive and fragile, handling, drying and storage are managed to preserve both colour and volatile oil content through to loading.
